Asian Inspired Chicken Pasta...
This is now month 7 of my attending a culinary certificate course, which I am thoroughly enjoying. It made my last visit to the Taste of Joburg a different experience, all together, and my main focus was trying to find interesting ingredients I could use in recipes. This recipe also came about as a result of my ever so awesome boss getting me a snappy chef induction cooker, since experimenting on this nifty gadget from the day of purchase, I have been hooked! Please check it out you will thank me!Anyway this is what you will require for this recipe-
Ingredients:
500-800g of chicken drumsticks / wings
one finely chopped onion
one finely chopped green pepper
bunch fresh parsley
can chopped & peeled tomato
40ml soy sauce
10ml fish sauce
10ml olive oil
2 teaspoons of 5 spice
Jar Sweet & Sour Chilli Relish (Chilladiddo)
Pasta (try Spaghettini or Capellini)
Olive oil to sprinkle
Salt and pepper to taste
Method
Spice the chicken with five Spice and marinate it with half the soy sauce and sweet chilli relish for 30 minutes.
In a pan sauté use the oil to sauté the onion and pepper, once translucent and the remainder of the soy sauce and the fish sauce. Brown the Chicken pieces and the can of toamato, simmer at low heat for 45min or until chicken is soft.
In a separate pot, boil water and prepare pasta as per instructions on packet. Once cooked place in colander, sprinkle with salt and pepper as drizzle with olive oil. Sprinkle finely shopped parsley into pasta and mix through.
